When you crave something crunchy for an evening snack, potato chips are often the first thing that comes to mind. However, most store-bought chips are loaded with oil and calories, which can contribute to weight gain. In such cases, ragi chips prove to be an excellent and healthy alternative.

Ragi, also known as finger millet, is rich in fiber, calcium, iron, and various essential nutrients, making it a valuable part of a healthy diet. A great advantage is that ragi chips can be prepared at home using very little oil. They can be made even more nutritious by baking or air-frying them. These chips are not only delicious but also help keep you feeling full for longer.
Ragi Chips Recipe
Which ingredients are added to the flour to make ragi chips?
Barley flour, chana dal, moong dal, fenugreek, asafoetida, garam masala, vinegar, baking soda, buttermilk
Wheat flour, refined flour (maida), semolina (sooji), cumin, coriander, chili, salt, ghee, milk
Corn flour, pearl millet (bajra) flour, oats, fennel seeds, ginger, black pepper, sugar, butter, yogurt
Ragi flour, rice flour, gram flour (besan), sesame seeds, turmeric, red chili, salt, oil, water
Ingredients
1 cup ragi flour
2 tablespoons rice flour
1 tablespoon gram flour (besan) (optional)
1 teaspoon sesame seeds or carom seeds (ajwain)
½ teaspoon turmeric powder
½ teaspoon red chili powder
Salt to taste
1 tablespoon olive oil or coconut oil
Water as needed
Method
First, combine the ragi flour, rice flour, gram flour, sesame seeds or carom seeds, turmeric, red chili, and salt in a large mixing bowl and mix well. Add the oil, then gradually add water to knead a dough that is soft yet firm. Divide the dough into small portions. Roll out each portion thinly and cut it into your preferred shapes—triangles, squares, or long strips.
Baking Method
Preheat the oven to 180°C. Place the chips on a baking tray and lightly brush them with oil. Bake for 15 to 18 minutes, flipping them over once halfway through. Alternatively, preheat the air fryer to 180°C. Air-fry the chips for 10 to 12 minutes, shaking the basket halfway through. Once cooled, store the chips in an airtight container; enjoy them as a healthy snack served with hung curd, mint chutney, or tomato salsa.
