Recipes made from local, wholesome ingredients offer a unique blend of great taste and the comforting simplicity of home cooking. 1. Spicy Pumpkin Vegetable (Kaddu ki Sabzi)
Cut fresh pumpkin into small pieces and temper mustard oil with cumin seeds, asafoetida (hing), and green chilies.
Add the pumpkin, turmeric powder, coriander powder, and salt, then cook over a low flame.
Adding a little dry mango powder (amchur) or a dry spice mix at the end enhances the flavor.
Serve hot with roti or paratha.
2. Pearl Millet (Bajra) Roti with Traditional Vegetable Dish
Mix a little salt into pearl millet flour and knead it using lukewarm water.
Shape the roti by hand and cook it on a griddle (tawa).
Serve with a seasonal vegetable dish, curd (yogurt), or homemade chutney.
This combination of traditional foods is sure to appeal to those who love authentic, rustic flavors.
3. Moong Dal Khichdi
Wash the split yellow moong dal and rice; place them in a pressure cooker with turmeric, salt, and a little ghee.
Add water and cook until soft.
Finish by adding a tempering (tadka) of ghee and cumin seeds.
Serving it with curd, pickle, or green chutney can transform a simple khichdi into a delicious dinner.
4. Crispy Colocasia (Arbi) Fry
Boil the colocasia (arbi), peel it, and cut it into pieces. Mix in turmeric, coriander powder, red chili powder, salt, and a little gram flour (besan).
Cook on a griddle (tawa) with a little oil until golden and crispy.
Squeeze some lemon juice over it before serving.
5. Chana Masala Chaat
Mix onion, tomato, green chili, coriander, and lemon into boiled black or white chickpeas.
Add roasted cumin powder and chaat masala.
A simple, traditional snack is ready in just a few minutes.
6. Masala Corn Roti (Makke ki Roti)
Prepare a soft dough by mixing salt and a little warm water with corn flour.
Pat it into a roti shape by hand and cook it on a griddle.
Apply a little ghee on top and serve with yogurt or a vegetable dish.
7. Moong Dal Chilla with Green Chutney
Soak and grind the moong dal, then mix in ginger, green chili, salt, and coriander.
Spread a little batter on a hot griddle and cook on both sides.

8. Desi Masala Poha
Wash the poha and let it sit for a few minutes.
Temper peanuts, mustard seeds, curry leaves, and green chilies in a pan.
Add the poha, turmeric, and salt, and mix well.
Garnish with lemon juice and coriander.

9. Sweet Jaggery and Sesame Roti
Prepare a soft dough by mixing sesame seeds and jaggery into the flour.
Roll out small rotis and cook them on a griddle.
Add a little ghee on top.
