Sarson ka Saag and Makki ki Roti Recipe: As winter arrives, the craving for traditional and authentic flavors in food automatically increases. If you can enjoy hot and nutritious food at home amidst the cold winds, the joy of winter doubles. In such a scenario, Makki ki Roti and Sarson ka Saag are considered the most favorite winter dishes of North India.

It is not only full of flavor but is also considered extremely beneficial for health. Sarson ka Saag keeps the body warm, and Makki ki Roti is full of energy.

So, if you also want to enjoy winter at home while avoiding the cold outside, you can easily make this traditional recipe at home. The best part is that it doesn't require many ingredients or much effort, yet its taste is amazing.

Method for making Sarson ka Saag:

First, you need to prepare the saag. For this, wash and chop 250-300 grams of mustard leaves, 100 grams of spinach, and 50 grams of bathua (lamb's quarters). Now, boil all the vegetables with ginger-garlic paste and 2-3 green chilies. You can add a little salt to enhance the taste. After boiling the saag, let it cool and grind it coarsely. Grinding it too finely will make the saag watery.

Heat 2-3 tablespoons of ghee in a pan. Add 1 finely chopped onion and sauté until golden brown. Now add the ground saag and cook on low heat for 10-15 minutes. During this time, you can add salt and red chili powder to taste. Stir the saag occasionally. Finally, add 1 tablespoon of butter on top. Be sure to add a tempering of dry red chilies.

Method for making Makki ki Roti:

Add a little salt to 2 cups of cornmeal. Gradually add lukewarm water and knead a soft, slightly crumbly dough. Note that cornmeal dough cannot be kneaded in the usual way, so knead it carefully. Keep your hands dry and make small balls of dough. Flatten each ball slightly with your palm or a rolling pin to form a round shape.

If the edges crack, smooth them with your fingers. Heat a griddle and cook the roti on both sides until golden brown. Apply a little ghee while cooking to enhance the flavor and keep the roti soft. Now, serve the corn roti hot with your favorite greens.
