Bihari cuisine is not limited to just *Litti-Chokha* or *Khaja*. There are many other delicacies here that, once tasted, will leave you craving more. One such dish is *Makuti*. *Makuti* is a sweet dish made from moong dal (split yellow mung beans), milk, and rice.

This dish is prepared during occasions like weddings in Bihar and is enjoyed with great relish. Its taste is reminiscent of a blend of *Phirni* and *Kheer*. If you wish to savor this special and delicious dish, here is the recipe. By following these steps, you can easily prepare it at home.
**Makuti Recipe**

**Ingredients for Makuti:**
Moong dal: 1/2 cup
Broken Basmati rice: 2 tablespoons
Full-cream milk: 1 liter
Sugar: 3/4 cup
Saffron strands (soaked in milk): 10-12
Cardamom powder: 1/2 teaspoon
Cashews and almonds: 2 tablespoons
Pistachios: 1 tablespoon
Ghee: 1 tablespoon
**Method for Making Makuti:**
First, wash the moong dal and rice thoroughly with water and let them soak for 30 minutes.
Next, drain the water, transfer the mixture to a pressure cooker, add one cup of water, and cook on medium heat until 2-3 whistles are heard.
Once cooked, let the dal and rice cool down, then grind them coarsely in a mixer.
Now, take a heavy-bottomed pan, pour in the full-cream milk, and bring it to a boil over medium heat. Once the milk comes to a boil, reduce the heat and let it simmer for 8–10 minutes so that it thickens.
Now, add the ground moong dal and rice paste to the boiling milk, stirring continuously.

Cook this mixture on a low flame for 15–20 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
As the mixture begins to thicken further, add the sugar, saffron-infused milk, and cardamom powder, and mix well. Then, add the chopped roasted dry fruits and turn off the heat.
Allow the Makuti to cool down slightly before serving. Finally, transfer it to a bowl, garnish with pistachios, and serve.
