Ingredients for Shahi Mushroom
The secret to this recipe lies in its gravy. For this, you will need:
Mushrooms: 200 grams (washed and chopped)
Vegetables: 2 large onions, 2 tomatoes, ginger-garlic paste
For the royal touch: 8-10 soaked cashews and 2 tablespoons fresh cream
Spices: Turmeric powder, red chili powder, coriander powder, garam masala, and salt to taste
For aroma: Fenugreek leaves (kasuri methi) and a little fresh coriander
Method for making Shahi Mushroom
First, heat a little oil in a pan. Add the roughly chopped onions, tomatoes, ginger, garlic, and cashews. Cook them until they become slightly soft. Once cooled, grind them in a blender to make a smooth paste. This paste will give your dish its thickness and royal flavor.
Now, add some butter or ghee to the pan. Add cumin seeds and a bay leaf. Now add the prepared paste and sauté it until the oil separates from the spices. Now add turmeric powder, red chili powder, and coriander powder and mix well. The aroma will already start spreading throughout the house.

Now add the chopped mushrooms to the gravy and add a little water, then cover and cook for 5-7 minutes on low heat so that the mushrooms absorb all the spices. Finally, add fresh cream, garam masala, and crushed fenugreek leaves.
Your hot and delicious Shahi Mushroom is ready. Garnish it with fresh coriander. It tastes best with butter naan, lachha paratha, or jeera rice.
