Sabudana Vada Recipe: With the onset of the winter season, people’s dietary preferences begin to shift. During this time, many enjoy a variety of dishes—some look for something new for breakfast, while others prefer a hot, crispy snack to accompany their evening tea. If you are looking to prepare something unique and delicious for your family this winter, consider making *sabudana vada* (sago fritters). These are crispy on the outside and soft on the inside, and they are quite easy to prepare at home.

You don’t need many ingredients to make *sabudana vada*. It can be prepared using *sabudana* (sago pearls), potatoes, onions, green chilies, garlic, fresh coriander, lemon, and a few common spices. It makes for a great breakfast, an evening snack, or a quick bite when you’re feeling a little hungry. Let’s look at the simple recipe.
Ingredients for Sabudana Vada
You will need *sabudana*, boiled potatoes, finely chopped onions, green chilies, garlic, fresh coriander, lemon juice, salt (to taste), *garam masala*, *chaat masala*, red chili powder, and *kitchen king masala*. You will also need oil for frying the *vadas*.
How to prepare the mixture for Sabudana Vada
Recipe expert Om Soni explained that to make *sabudana vada*, you should first purchase the *sabudana* a day in advance and clean it thoroughly. Soak it in water so that the pearls swell up well. Ensure that the *sabudana* does not become overly wet or soggy. The next morning, gently mix the soaked *sabudana* and set it aside. Meanwhile, boil the potatoes in a pressure cooker. Once they have cooled, peel them and mash them well. In a large bowl, combine the soaked *sabudana* and the mashed potatoes. Next, add salt to taste, garam masala, chaat masala, red chili powder, and 'Kitchen King' masala.
Shaping the Vadas
After incorporating the spices, add finely chopped onion, green chilies, garlic, and fresh coriander leaves to the mixture. Also, add a little lemon juice. Mix everything thoroughly to prepare the final mixture. Lightly grease your palms with oil and divide the mixture into small portions. Press each portion between your palms to shape them into *tikkis* (patties) or *vadas*.
Frying the Sabudana Vadas
Heat oil in a pan (kadhai). Once the oil is hot, place the prepared *vadas* in it and fry over medium heat until they turn golden brown and crispy. Once fried, remove the *vadas* from the pan and place them on a plate. You can serve them with a chutney made from fresh coriander, green chilies, and tomatoes.
