Rajasthani cuisine features many traditional recipes that, despite being made from simple ingredients, are exceptionally flavorful. One such authentic dish is a preparation of *chana dal* (split Bengal gram) and *dana methi* (fenugreek seeds). While you may have tasted *chana dal* many times, the addition of *dana methi* and a tempering of traditional Rajasthani spices transforms its flavor entirely. A great feature of this dish is that it can be prepared with a sweet-and-sour profile to suit your preference; it is best served hot alongside *rotis* or *parathas*.
To prepare this traditional dish, you will need *chana dal*, *dana methi*, oil, mustard seeds, cumin seeds, bay leaf, garlic, red chili powder, turmeric, coriander powder, and salt. You can also add *amchur* (dried mango) powder and a little jaggery to enhance the flavor. Using these common pantry staples, you can easily prepare a delicious Rajasthani dish at home.
**Preparing the *dal* and *dana methi***
According to Priti Sen, a homemaker from Jalore, the first step is to soak the *chana dal* in water overnight. In the morning, boil the *dal* until it comes to a boil twice—be careful not to overcook it, as it will be cooked further along with the spices and *dana methi*. Separately, lightly boil the *dana methi*; do not overcook it—boil it just enough to reduce its inherent bitterness. Once done, set both the *dal* and the *methi* aside.
**Enhancing flavor with a garlic tempering**
Heat oil in a pan and add the mustard seeds, cumin seeds, and bay leaf. Next, add 6–7 chopped garlic cloves and sauté them well. In a small bowl, mix the red chili powder, turmeric, coriander powder, and salt with a little water to form a paste. Add this spice mixture to the pan and cook thoroughly. To prevent the spices from burning, you may add a little water as needed. Once the spice mixture is well-cooked, add the boiled chana dal (split Bengal gram) and fenugreek seeds (dana methi) to it and stir well. Cook for a while so that the flavors of the spices are thoroughly absorbed by the dal and fenugreek seeds.
Add a sweet-and-sour touch with amchur and jaggery.
Finally, add amchur (dried mango) powder to taste; this will impart a subtle tanginess to the dish. If you prefer a sweet-and-sour flavor, you can also add a little jaggery. Jaggery lends a mild sweetness to the dish, making its flavor even more special. Your traditional Rajasthani Chana Dal-Dana Methi dish is now ready. Seasoned with authentic local spices and a garlic-based tempering (tadka), this dish brings a delightful new flavor to your everyday meals. Serve it hot with rotis or parathas and enjoy the traditional taste of Rajasthani cuisine.
