How to Make Maharashtrian Batata Bhaji
To make Batata Bhaji, first peel the boiled potatoes and break them into large chunks using your hands. Next, coarsely crush the roasted peanuts; do not grind them into a fine powder, as the crunchiness enhances the flavor of the bhaji.
Heat oil in a pan and add mustard seeds, allowing them to splutter. Then, add cumin seeds, asafoetida, curry leaves, and chopped green chilies, and sauté for a few seconds. Add the turmeric powder and potato chunks to the pan. Mix in salt and red chili powder to taste.
Next, add the coarsely crushed peanuts and cook over medium heat for 2-3 minutes. Be careful not to mash the potatoes completely; let the chunks remain intact. Finally, mix in the lemon juice thoroughly. Garnish with freshly chopped green coriander and turn off the heat.
