During a fast, one often gets bored of eating bland or sweet foods and begins to crave something spicy and tangy. If you are looking to whip up something delicious in a hurry, 'Vrat-friendly Aloo Bhujia' (Potato Stir-fry) is an excellent option for the final day of Sawan Somvar.

Combining the crunchiness of peanuts with the heat of green chilies, this dish will truly enhance the flavor of your fasting meal. Best of all, it takes very little time to prepare. Let’s look at the easiest way to make it.

**Required Ingredients**
To make this delicious and crispy bhujia, you only need a few simple ingredients commonly found at home:

Raw potatoes: 3 to 4 (peeled and cut into thin, long strips)
Peanuts: ½ cup (lightly roasted and coarsely crushed)
Green chilies: 2 to 3 (finely chopped)
Cumin seeds: 1 teaspoon
Rock salt (Sendha Namak): To taste (fasting-friendly salt)
Ghee or peanut oil: 2 tablespoons
Fresh coriander: A little (for garnishing)
Lemon juice: ½ teaspoon (for a tangy flavor)

**Preparation Method**
Making this is incredibly easy; simply follow the steps below:

First, wash the potato strips thoroughly in water 2–3 times to remove the starch. Then, place them on a clean cloth and pat them dry to remove all moisture.

Place a pan (kadhai) on the stove and heat the ghee or peanut oil. Once the oil is hot, add the cumin seeds and let them splutter.

After the cumin seeds are roasted, add the finely chopped green chilies and sauté for a few seconds.
Now, add the potatoes to the pan and mix well. Keep the flame on medium and cook the potatoes, stirring occasionally, until they turn golden and crispy. Once the potatoes are nearly cooked, add the coarsely crushed peanuts and rock salt (sendha namak) to taste.

Sauté for another 2 to 3 minutes so that the crunch of the peanuts and the flavor of the salt blend well with the potatoes. Turn off the heat and mix in fresh coriander leaves and lemon juice.
You can serve this hot and crispy potato dish with plain yogurt or a coriander-mint chutney suitable for fasting.
