Preparing breakfast is part of the daily morning rush for many people. If you are short on time in the mornings, a little meal prep can ease the hassle. Preparing the batter for certain breakfast dishes in advance and storing it properly in the refrigerator can make breakfast preparation much easier over the next few days. Having a base batter ready for dishes like dosa, chilla, or idli is particularly useful. However, the shelf life of the batter depends on its ingredients and how it is stored.

Which batters can be prepared in advance?
You can prepare batters for moong dal chilla, besan (gram flour) chilla, or dosa ahead of time. If you plan to store the batter for three days, choose recipes where the quality of the batter remains unaffected by refrigeration.
An easy way to prepare the batter
Wash the moong dal thoroughly and soak it for a few hours. Drain the water, grind the dal, and add water as needed to create a thick batter. You can mix in salt, ginger, green chilies, and a little cumin. Store the batter in a clean, dry, airtight container.
How to use it over three days?
Always keep the batter refrigerated and scoop out only the amount needed for a single meal. Use a clean, dry spoon each time you use it. Do not use the batter if you notice a sour or unusual smell, color, or texture.
Vary the breakfast flavor daily.
You can make different types of breakfast dishes from the same batter. On the first day, you can make plain moong dal chilla; on the second day, mix in finely chopped vegetables to make a veggie chilla; and on the third day, prepare small, pancake-style chillas. This ensures a quick breakfast while keeping the taste varied each day. If you prepare a batter using semolina, rice, and lentils, you can make dosas one day, idlis the next, and uttapam or appe on the third day.

Instead of leaving the batter at room temperature for an extended period, refrigerate it immediately. If a recipe requires natural fermentation, it may call for different storage and preparation methods. Always ensure proper storage based on the specific recipe and ingredients.
