Make garlic fried rice at home—prepare it in a flash using leftover rice; here’s the recipe...

Garlic Fried Rice: Winter has arrived in Ranchi, the capital of Jharkhand. The evenings have started to get quite chilly. If you are also feeling the bite of the cold, you should definitely try making 'Garlic Fried Rice' at home. This recipe uses a generous amount of garlic, which has a 'warming' effect—so much so that you might even break into a sweat while eating it! The best part is that you can whip it up quickly using leftover rice.

Divya, a resident of Ranchi, shares that it is incredibly easy to prepare. Start by taking 10 to 12 cloves of garlic. Instead of grinding them in a mixer, crush them well using a mortar and pestle. Be careful not to turn the garlic into a smooth paste; you want it crushed into a coarse texture.

It is perfectly fine if some larger pieces of garlic remain. Additionally, prepare some chopped (or crushed) onion, tomato, and 4 to 5 green chilies. Keep your rice ready on a separate plate—leftover rice from lunch works best for this recipe.

To cook, place an iron wok (kadhai) on the stove; cooking in an iron wok enhances the flavor. Add mustard oil to the wok. Once the oil is hot, add cumin seeds for tempering. Next, add the crushed garlic and let it cook slightly. Then, add the chopped onion, tomato, and crushed green chilies.

Sauté everything lightly. Once the ingredients are partially cooked, add a little coriander powder, a mixed spice blend (garam masala), turmeric, and salt to taste. After sautéing these well, add the leftover rice and mix it thoroughly with the spices.

Finally, to double the flavor, sprinkle a packet of Maggi masala over the top. Now, stir-fry it thoroughly over high heat two to three times, then remove from the heat. Your delicious, piping-hot garlic fried rice is ready! Serve it on a plate and enjoy it with your family during this cold weather.
