Ingredients:

1 cup split yellow moong dal
½ cup edible gum (gond)
1 tablespoon ghee (optional, can be made without ghee)
2 tablespoons almonds
2 tablespoons walnuts
1 tablespoon sesame seeds
1 cup fox nuts (makhana)
½ teaspoon dry ginger powder
½ teaspoon turmeric powder
½ teaspoon cardamom powder
½ cup deseeded dates

Instructions:
First, roast the moong dal in an air fryer or on a pan for 3 minutes until lightly golden and fragrant. Similarly, roast the almonds, walnuts, sesame seeds, and fox nuts and set them aside. After cooling, make a coarse powder of the moong dal and nuts. Roast the edible gum in an air fryer or pan until it puffs up and add it to the nut mixture.

Now, add the dates to the ghee and cook on low heat for 1 minute, then add the dry ginger, turmeric, and cardamom powder. Let the mixture cool slightly and then mash it with your hands or in a mixer. Combine this with the moong dal powder and the gum-nut mixture. If the mixture feels dry, add a little warm milk and knead it.

While the mixture is still warm, make small laddoos and let them cool completely. These ladoos are not only delicious but also high in protein and low in fat. Enjoy them with turmeric milk or serve them as a healthy snack. They stay fresh for up to a week when stored in an airtight container, and can be kept fresh for even longer in the refrigerator.
