Are you looking for a snack to pair with your evening tea that is both crispy and healthy? If you are seeking a perfect blend of taste and nutrition, Vietnamese-style rice paper fritters are an excellent choice.

When protein-rich stuffing is wrapped inside thin sheets of rice paper, the resulting dish is not only delicious but also beneficial for your health. From kids' school tiffin boxes to evening tea, this unique dish is a fantastic option for any occasion. So, let’s learn the easy way to make them.
What do you need to make them?
You will need just a few simple, easily available ingredients:
8 to 10 rice paper sheets
1½ cups boiled and well-mashed chickpeas or kidney beans (rajma)
½ cup crumbled paneer (cottage cheese)
1 small carrot (grated)
2 tablespoons finely chopped capsicum (bell pepper)
1 small onion (finely chopped)
1 teaspoon soy sauce
½ teaspoon black pepper powder
1 teaspoon ginger-garlic paste
Salt to taste
Oil for frying
Step 1: Prepare the protein-rich filling
First, place the boiled and mashed chickpeas or kidney beans in a large bowl. Add the grated carrot, finely chopped onion, chopped capsicum, and crumbled paneer. Next, add salt, black pepper powder, soy sauce, and ginger-garlic paste for flavor, and mix everything thoroughly. Your tasty filling—packed with fiber, vitamins, and protein—is now ready.
Step 2: Now for the rice paper
Softening the rice paper is a crucial step. To begin, pour some lukewarm water into a wide plate. Dip the rice paper sheet into the water for just a few seconds and then remove it. Be careful not to leave it in the water for too long, as the sheet might become too soggy and tear.
Step 3: Shaping and Cooking the Pakodas
Place the softened rice paper on a clean plate. Spoon 1 to 2 tablespoons of the prepared protein filling right into the center. Fold in the edges to shape it into a small roll or a pouch. Prepare the remaining pakodas in the same way.
Place a pan or wok on the stove and heat some oil. Once the oil is hot, deep-fry the rolls over medium heat. Within a few minutes, the pakodas will turn golden brown and perfectly crispy. If you are health-conscious, you can cook them in an air fryer or shallow-fry them with a little oil.
