Lachha Pyaz Paratha (Layered Onion Paratha) Recipe: If you are looking for something delicious and quick to prepare for dinner, Lachha Pyaz Paratha is an excellent choice. Its crispy texture and the aromatic, spiced onion filling are sure to be a hit with everyone. The best part is that it doesn’t require many ingredients or much effort; it can be easily made using basic pantry staples like flour, onions, and common spices. Let’s look at an easy recipe for making Lachha Pyaz Paratha.

To make Lachha Pyaz Paratha, you will need 2 cups of whole wheat flour, salt to taste, water as needed, and 1 teaspoon of oil. For the filling, prepare 4 finely sliced onions, 2 teaspoons of Kashmiri red chili powder, ½ teaspoon each of coriander powder, cumin powder, nigella seeds (kalonji), carom seeds (ajwain), garam masala, and black salt, along with 2 green chilies, fresh coriander leaves, and 1 teaspoon of mustard oil.

Step 1: Begin by taking a large mixing bowl and adding the whole wheat flour and salt to taste. Gradually add water and knead it into a soft dough. Add a teaspoon of oil and knead the dough again until it becomes soft and smooth. Cover the prepared dough with a damp cloth and let it rest for 15–20 minutes. This allows the dough to set properly, making it easier to roll out the parathas. Meanwhile, you can prepare the spiced onion filling.

Step 2: Start by slicing the onions into thin, long strips and placing them in a bowl. Add a little salt and let them sit for a few minutes so the onions release their moisture. Squeeze out the excess water from the onions and transfer them to a clean bowl. Add the garam masala, coriander powder, Kashmiri red chili powder, black salt, cumin powder, green chilies, nigella seeds, carom seeds, finely chopped fresh coriander, and mustard oil, then mix everything well.

Step 3: Once the dough has set well, divide it into equal-sized portions (balls). Take one portion and roll it out into a round shape, similar to a chapati. Spread the prepared onion stuffing evenly over the center. Next, make a cut from the center of the rolled-out dough to the edge, then roll it up from the cut edge to form a circular shape. Gently press it down to create a layered (laccha-style) dough ball. Finally, dust it with some dry flour and carefully roll it out again, ensuring the layers remain intact.

Step 4: First, heat a griddle (tawa) well over medium heat. Place the prepared paratha on the griddle and lightly toast it on both sides (without oil or ghee). Then, apply ghee to both sides and cook, flipping it occasionally, until the paratha turns golden brown and crispy. Your delicious, layered onion paratha is now ready. Serve it piping hot with green chutney, yogurt, or pickles. It will taste so wonderful that everyone will be left licking their fingers!
