Veg Dum Biryani Recipe: If you love the aromatic and delicious Veg Dum Biryani served in restaurants, you no longer need to go out to enjoy it. You can prepare an exquisite Veg Dum Biryani right at home using simple ingredients and spices. It features Basmati rice, fresh vegetables, yogurt, and a blend of special spices. Cooking it on low heat—a process known as 'dum'—significantly enhances both its flavor and aroma. Let’s look at an easy recipe to prepare it.

To make Veg Dum Biryani, you will need 2 cups of Basmati rice, 6 medium-sized onions, 20–25 garlic cloves, a 2-inch piece of ginger, 3–4 green chilies, 1 tomato, 2 carrots, some French beans, half a head of cauliflower, 2 potatoes, and half a cup of peas. Additionally, keep 200 grams of yogurt, 3–4 tablespoons of oil, half a teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 tablespoon of black pepper, 2 teaspoons of coriander powder, 1.5 teaspoons of Biryani masala, salt, fresh coriander leaves, and mint leaves on hand.
Step 1: Begin by thoroughly rinsing the Basmati rice in clean water. Continue rinsing until the water runs completely clear. Then, soak the rice in water for at least 30–45 minutes. Once the time is up, drain the water, then cook the rice in a pot with sufficient water until it is about 70–80 percent cooked. Be careful not to overcook the rice; it should not be completely soft.
Step 2: Next, to prepare the gravy for the Biryani, finely chop the onions, ginger, garlic, green chilies, and tomatoes. Also, chop the fresh coriander and mint leaves. Cut all the vegetables—carrots, French beans, cauliflower, and potatoes—into medium-sized pieces. Ensure that the potato pieces are slightly larger than the other vegetables.
Step 3: First, heat a wide, heavy-bottomed pot over high heat and add oil. Once the oil is hot, add the finely chopped onions and sauté until they turn golden brown. Next, add the ginger, garlic, and green chilies, and cook for 2–3 minutes. Then, add the turmeric, black pepper, red chili powder, coriander powder, and biryani masala, and mix well. Add the chopped tomatoes, whisked yogurt, and salt to taste. Stir everything together and cook over high heat until the oil begins to separate from the spices.
Step 4: Once the gravy is well-cooked and the oil has separated, add the chopped potatoes and sauté for 2–3 minutes. Continue cooking over low heat until the potatoes become tender. Then, add the remaining vegetables—carrots, French beans, cauliflower, and green peas—and mix well. Add hot water as needed to achieve the desired consistency for the gravy, and allow the vegetables to cook thoroughly.

Step 5: Add the cooked basmati rice to the prepared vegetable gravy and mix gently but thoroughly. Sprinkle a handful of fresh mint leaves and fresh coriander leaves over the top. Drizzle melted ghee evenly over the surface, then cover the pot tightly with a lid. Let the biryani cook on low heat (a process known as 'dum') for 20–30 minutes, allowing the flavors of the spices to fully infuse into the rice and vegetables. Once the time is up, turn off the heat and serve the hot Veg Dum Biryani with raita or a salad. Even children will love it!
