Spiced Sweet Potatoes

Ingredients for Sweet Potato Curry

2 medium-sized sweet potatoes (diced)

1 finely chopped onion and tomato

1 cup coconut milk (or whipped yogurt)

Ginger-garlic paste

Spices: turmeric, red chili, coriander powder, and garam masala

For the tempering: mustard seeds, curry leaves, and green chilies

Method for Sweet Potato Curry

First, heat the oil in a pan. Add mustard seeds, curry leaves, and green chilies. Add onions and fry until golden.

Next, add the ginger-garlic paste and then all the dry spices along with the tomatoes. When the masala starts releasing oil, the base is ready.

Now add the chopped sweet potatoes, add a little water, cover, and cook for 5-7 minutes.

When the sweet potatoes are soft, add coconut milk or yogurt. Cook on low heat for 2 minutes and sprinkle with coriander leaves.
