Prepare the ingredients
Poha (regularly sized) – 2 cups
Onion (Kanda) – 1 large
Green chilies – 1-2
Coriander leaves – 2-3 tablespoons.
Peanuts – 2 tablespoons
Mustard oil – 2 tablespoons
Cumin seeds – 1/2 teaspoon
Curry leaves – 5-6 leaves.
Turmeric – 1/4 teaspoon
Salt – to taste
Sugar – 1/2 teaspoon
Lemon – 1/2 lemon
Step-by-step recipe
Step 1: Prepare the Poha
Wash the Poha 2-3 times with water and place it in a sieve. This will remove excess water from the Poha, making it fluffy.
Step 2: Cut the vegetables
Slice the onion lengthwise into thin slices. Finely chop the green chilies and coriander leaves. Dry roast the peanuts, or you can lightly fry them in oil while making the poha.
Step 3: Roast the Masala
Heat 2 teaspoons of mustard oil in a pan. Add cumin seeds and mustard seeds and fry them. Then add the peanuts and lightly fry. Next, add the onion and curry leaves and lightly fry the onions. Add the green chilies and turmeric and mix.
Step 4: Mix the Poha
Now add the Poha, season with salt and sugar, and mix gently. Add the coriander leaves and lemon juice and stir gently. Cook covered over low heat for 2 minutes.

Serve and Enjoy
