Ingredients for Classic Christmas Pudding:
120 grams suet
60 grams self-raising flour (sifted)
120 grams white breadcrumbs
240 grams Demerara sugar
120 grams sultanas
120 grams of raisins
120 grams currants
1 apple (grated)
Grated zest of 1 orange and 1 lemon
1 tablespoon candied orange peel
1 tablespoon candied lemon peel
1 teaspoon each of mixed spice, nutmeg powder, and cinnamon powder
30 grams chopped almonds
2 eggs
50 ml rum
70 ml white wine
70 ml stout

Method for making Christmas Pudding:
First, mix the suet, flour, breadcrumbs, and sugar well in a large bowl. Now add the dried fruits, apple, orange, and lemon zest, candied peel, spices, and almonds.

In another bowl, whisk the eggs and mix in the rum, wine, and stout. Add this mixture to the dry ingredients and mix well to form a thick batter. Now cover the bowl and refrigerate overnight. The next day, take it out and stir it again. Grease a 1.1-liter pudding mold or ovenproof bowl with butter and fill it with the pudding mixture. Cover and tie it securely with greaseproof paper and foil.

Place the bowl in a large pan and pour enough boiling water into the pan to reach halfway up the sides of the bowl. Cover and steam over low heat for approximately 8 hours. Add more boiling water as needed if the water level drops.

How to serve the pudding:
The pudding can be eaten immediately or cooled and repacked. It can also be stored for up to a year. Simply steam it again for 2.5 hours before serving. This recipe is sufficient for approximately 11 people.
