Ingredients

Sesame seeds: 1 cup
Ghee: 1-2 teaspoons
Jaggery: 200 grams
Dried fruits: 100 grams, finely chopped
Peanuts: 50 grams

Recipe

- First, place a pan on the stove. Add the sesame seeds to the pan and roast them until they turn light brown.

- Once the seeds are thoroughly roasted, spread them on a plate and let them cool. Now, roast the dry fruits like cashews, pistachios, almonds, and peanuts over low heat.

- Be careful not to overheat, otherwise the nuts will darken and taste bitter. Remove the roasted nuts from the heat and add ghee to the pan.

- Add the jaggery and let it melt. Mix well so that the jaggery doesn't stick to the pan. Continue this process for 1-2 minutes.

- When the jaggery is hot, add the roasted sesame seeds. Mix well to avoid lumps.

- Keeping the flame low, add the roasted dry fruits to the sesame-jaggery mixture and mix well. Let it cook for 1-2 minutes.

- Now, take a flat plate and pour a few drops of ghee on it. Pour the sesame-jaggery and dry fruits mixture onto the plate and spread it evenly.

- Once it cools slightly, cut it into square or rectangular pieces as desired. Now let the sesame-jaggery gajak cool to room temperature.
