If you are bored of eating the same type of vegetable dish every day and want to prepare something at home that tastes like restaurant-quality food—without requiring too much effort—then 'Yellow Dal Tadka' (tempered yellow lentils) is an excellent choice. Not only is it delicious, but it is also very easy to prepare. The best part is that when served with roti, rice, or paratha, you won’t even need to prepare a separate side dish or chutney.

Choose your preferred lentils
To make Yellow Dal Tadka, start by selecting either *arhar* (split pigeon peas) or *moong* (split mung beans) lentils, according to your preference. Rinse the lentils thoroughly with water and place them in a pressure cooker. Add salt to taste, a pinch of turmeric powder, and enough water; then, secure the lid. Cook over medium heat for about 3 to 4 whistles. Once done, turn off the heat and allow the pressure to release naturally. After opening the cooker, stir the lentils well until the consistency is uniform.
The *tadka* (tempering) provides the authentic flavor
Now, it’s time for the *tadka*—the step that gives the dal its restaurant-style taste. Heat some oil or ghee in a pan. Once hot, add a little cumin seed (*jeera*). When the cumin begins to crackle, add finely chopped onions and sauté until they turn golden brown. Sautéing the onions well imparts a wonderful flavor and aroma to the dal.
Next, add chopped tomatoes to the pan and cook them until they become soft and completely tender. If you like, you can also add a bit of red chili powder and coriander powder to enhance the flavor.
Achieving that perfect restaurant-style taste
Finally, add the boiled lentils to the *tadka* and mix everything well. You can adjust the consistency of the dal by adding a little hot water as needed. Let it cook over a low flame for 3 to 5 minutes so that the flavors of the onions, tomatoes, and spices blend well into the lentils (dal).
Finally, garnish with finely chopped fresh coriander leaves. For a restaurant-style flavor, you can prepare a separate tempering (*tadka*) by heating some ghee and adding cumin seeds and red chilies, then pouring it over the dal.
No need for a separate side dish!
And that’s it—your delicious, restaurant-style yellow *dal tadka* is ready. Serve it hot with rotis, rice, or parathas. Its zesty, spiced flavor is so delightful that it can turn an ordinary meal into something special. Often, this single dish is enough for the entire family’s meal, saving you the hassle of preparing additional side dishes or chutneys.
