During the festival of Diwali, homes are often stocked with sweets as well as dry fruits like almonds, cashews, pistachios, walnuts, and raisins. After serving them to guests or using them in religious rituals, there are frequently leftovers. It can sometimes be confusing to know what to do with them. Instead of just storing them in a container for a long time or eating a handful every day, you can use them to create new recipes—ranging from delicious snacks to sweet desserts.

Make healthy granola bars at home: You can prepare granola bars using your leftover almonds, cashews, walnuts, and raisins. Simply chop the nuts into smaller pieces, then mix in some oats along with honey or a date paste. Spread the mixture onto a tray, press it down firmly, and refrigerate for a while. Once set, cut it into bars. These make for a great breakfast option or a perfect snack to satisfy those light hunger pangs in the evening.
Create a creamy dip with cashews and walnuts: If you have leftover cashews and walnuts, you can whip up a delicious dip. Soak the nuts in water for a while, then blend them with garlic, lemon juice, salt, and some herbs. Adjust the consistency by adding water as needed. This dip pairs perfectly with toast, sandwiches, and various snacks.
If you’re craving something sweet and unique, try making stuffed dates. Remove the pits from the dates and fill them with chopped almonds, pistachios, and walnuts. You can even top them with a little desiccated coconut or melted chocolate. These are quick to prepare and make an excellent treat to serve to guests.
Make Chocolate Bark: You can use leftover dry fruits to make chocolate bark at home. Simply melt some dark or milk chocolate and spread it out on a sheet of butter paper. Sprinkle chopped almonds, cashews, pistachios, and raisins over the top, then place it in the refrigerator to set. Once the chocolate has hardened, break it into smaller pieces. It’s a treat that both children and adults will enjoy.
Prepare Sweet Dry Fruit Parathas: Dry fruits aren't just for sweets; they can also be used for breakfast. Finely chop some almonds, cashews, walnuts, and raisins, and mix in a little jaggery and cardamom powder. Stuff this mixture into a ball of dough, roll it out into a paratha, and cook it on a griddle (tawa) using ghee. This makes for a delicious option on a winter morning.
Create a Special Dessert with Baked Apples: If you have apples at home, you can use dry fruits to create a unique dessert. Core the apples and fill the centers with chopped walnuts, almonds, raisins, a dash of cinnamon, and some honey. Bake them in an oven until tender, and serve them warm. The flavor will be quite distinct from your typical fruit-based dessert.

Make 'Masala Milk' Powder: Lightly roast your leftover almonds, cashews, and pistachios, and let them cool. Grind them together with some cardamom and a bit of cinnamon to create a powder. Stir this mixture into milk and enjoy it hot. You can also add a pinch of saffron for extra flavor. Store the powder in an airtight container and use it whenever you like.
