It is impossible to talk about Indian sweets without mentioning Balushahi. With a slightly crisp exterior and a soft interior, Balushahi is a popular treat for festivals, weddings, and special occasions. Contrary to what it might seem, making it is not actually that difficult. With a little care and the right technique, you can prepare professional-quality Balushahi right at home.

Ingredients
All-purpose flour (Maida) – 2 cups
Ghee – ½ cup
Baking powder – ½ teaspoon
Baking soda – ¼ teaspoon
Yogurt (Dahi) – ¼ cup
Lukewarm water – as needed
Ghee or oil – for frying
For the sugar syrup (Chashni)
Sugar – 2 cups
Water – 1 cup
Cardamom powder – ½ teaspoon
A few strands of saffron
Chopped pistachios and almonds – for garnishing
Method for making Balushahi
In a large mixing bowl, combine the all-purpose flour, baking powder, and baking soda. Add the ghee and rub it into the flour using your hands until the mixture resembles breadcrumbs. Next, add the yogurt and mix gently. If needed, add a little lukewarm water to form a soft (not firm) dough.
Be careful not to over-knead the dough, as this will prevent the characteristic layers of the Balushahi from forming. Cover the dough and let it rest for about 20 to 25 minutes.
Divide the dough into small portions. Shape each portion into a small ball, flatten it slightly, and use your thumb to make a small indentation in the center. This is the traditional shape of a Balushahi.
Preparing the sugar syrup
In a pan, combine the sugar and water and bring to a boil. Once the sugar has completely dissolved and the syrup reaches a "one-string" consistency, add the cardamom powder and saffron. Turn off the heat and keep the syrup warm.
The right way to fry
Heat ghee or oil in a deep pan (kadhai). Ensure that the oil is not excessively hot. Place the balushahi in the oil over low heat and fry them slowly until they turn golden brown. This process may take 10 to 15 minutes. Frying them over high heat will cause the balushahi to burn on the outside while remaining raw on the inside.
Once the balushahi have turned golden brown, remove them from the oil and let them cool for 2 to 3 minutes. Then, while they are still slightly warm, submerge them in the warm sugar syrup for 5 minutes.

Serving instructions:
Remove the balushahi from the sugar syrup and garnish with chopped pistachios and almonds. Allow the prepared balushahi to rest for a while so that the sugar syrup sets properly.
