Ingredients for Mango Kheer:
Full-cream milk – 1 liter
Broken rice (specifically for Kheer) – ¼ cup
Ripe mango pulp – 1 to 1.5 cups
Sugar – ½ cup
Cardamom powder – 1 teaspoon
Saffron strands – 10-12
Dry fruits – Finely chopped cashews, almonds, and pistachios
Small mango pieces – ¼ cup
Method for making Mango Kheer:
First, wash the rice thoroughly 2-3 times and soak it in water for half an hour. Next, place the milk in a heavy-bottomed pot or pan to boil.
Once the milk comes to a boil, reduce the heat to low and simmer until it reduces to half its original volume. Stir occasionally and scrape the cream forming on the sides of the pot back into the milk.
Now, add the soaked rice to the milk and cook on low heat until the rice becomes soft. Once the rice is fully cooked and has blended well with the milk, the base for the kheer is ready.
Now, add the sugar, soaked saffron, and finely chopped dry fruits. After adding the sugar, cook the kheer for another 5 to 7 minutes so that the sugar dissolves completely and the kheer thickens slightly.

Turn off the heat, stir in the cardamom powder, and set the kheer aside to cool down completely.
Add the mango pulp to the cooled kheer and mix well using a whisk or a spoon. Refrigerate the kheer for at least 1 to 2 hours.
Once chilled, transfer it to serving bowls. Garnish with small mango pieces, a few dry fruits, and saffron strands before serving.a
