**Ingredients Required for Kathi Rolls**
Take 2 cups of all-purpose flour (maida), a pinch of salt, 2 tablespoons of oil, water as needed, 1 finely chopped onion, 1 chopped capsicum (bell pepper), 1 cup of paneer (cottage cheese) or boiled chicken, ½ teaspoon of red chili powder, ½ teaspoon of garam masala, salt to taste, tomato ketchup, green chutney, and a sprinkle of chaat masala. **First, prepare the Dough for the Parathas**
In a mixing bowl, combine the all-purpose flour, salt, and a little oil. Now, gradually add water and knead it into a soft dough. Cover the dough and let it rest for 15 to 20 minutes; this will ensure the parathas turn out soft. Afterward, divide the dough into small balls (loiyas) and roll them out into flat discs.
**How to Prepare the Filling**
Heat a little oil in a pan. Add the chopped onions and sauté them lightly. Now, add the chopped capsicum and cook for about two minutes. Next, add the pieces of paneer or the boiled chicken. Add the salt, red chili powder, and garam masala, and mix everything thoroughly. You may also add a pinch of chaat masala if desired. Cook for another 3 to 4 minutes, then turn off the heat. Your delicious filling is now ready.
**The Right Way to Cook the Parathas**
Now, heat a griddle (tava) and cook the rolled-out parathas, applying a little oil to them as they cook. Cook on both sides until golden brown. If you desire the authentic taste of a Kathi Roll, you can also spread a beaten egg over the paratha while cooking it; this makes the roll even more delicious. However, it turns out excellent even without the egg.
Now, Assemble the Roll:
Place the prepared paratha on a plate. Spread green chutney or sauce over it. Now, place the prepared filling in the center. Top it with onions, cucumber, cabbage, and a sprinkle of chaat masala. You may also squeeze some lemon juice over it if you wish. Now, roll it up tightly. Wrap the bottom section with paper or foil to make it easier to hold.
