Semolina (Rava) – 1 cup
Sugar – 1 cup
Desi ghee – 5 tbsp
Cardamom powder – 1 tsp
Almonds – 10
Cashews – 10
Pistachios – 10
Saffron – 1 pinch

Recipe

- Put ghee in a pan and heat it on a low flame. After the ghee melts, add semolina and fry it till it becomes light brown.

- Meanwhile, put sugar and a cup of water in another vessel and keep it on the gas to make syrup.

- Now take saffron and grind it and add it to the syrup and mix it well with the help of a spoon. Meanwhile, keep stirring the semolina so that it does not stick to the bottom.

- Take dry fruits (cashews, almonds, pistachios) and cut them into small pieces. Put them in the semolina and mix.

- It may take at least 10 minutes for the semolina to cook well. Meanwhile, turn off the gas when the syrup starts boiling.

- After the semolina is cooked, add the syrup to it and mix the mixture well with the help of a ladle. After increasing the flame of the gas, keep stirring the halwa continuously with a ladle.

- Keep stirring it until the halwa starts leaving the sides of the pan. After cooking it for at least 4-5 minutes, turn off the gas and cover the pan well.

- Now let the halwa cook a little more with the help of steam. Remove the lid after some time. Kesari semolina halwa is ready. You can garnish the halwa with dry fruits.
