Make the perfect Sabudana Khichdi—packed with health and flavor—for your fast; here’s how..

During a fast, it is advisable to consume food that is light yet provides the body with ample energy. Sabudana Khichdi is one of the most popular and preferred dishes for this purpose. Not only is it delicious, but it is also rich in carbohydrates, protein, and essential nutrients. It is specially prepared during festivals and observances like Navratri, Ekadashi, and Mahashivratri. When prepared correctly, the dish turns out fluffy (with distinct grains), tasty, and truly delightful.

**Ingredients Required**
1 cup Sabudana (sago pearls)
2 medium-sized boiled potatoes (chopped)
½ cup coarsely ground roasted peanuts
2 green chilies (finely chopped)
1 teaspoon cumin seeds
8-10 curry leaves
2 tablespoons ghee or peanut oil
Rock salt (Sendha Namak) to taste
1 tablespoon lemon juice
2 tablespoons fresh coriander leaves (finely chopped)
**The Right Way to Soak Sabudana**
The taste of Sabudana Khichdi depends largely on how the sago is soaked. First, rinse the sabudana thoroughly with water 2-3 times. Then, place it in a bowl and add just enough water to submerge the pearls. Cover and let it soak for 5 to 6 hours or overnight.
After soaking, press a pearl between your fingers; if it mashes easily, the sabudana is ready for making khichdi. Excess water can make the khichdi sticky, so pay special attention to this step.
**Preparation Method**
Heat ghee or oil in a pan. Add cumin seeds and let them splutter. Next, add the green chilies and curry leaves, and sauté for a few seconds. Then, add the chopped boiled potatoes and fry them until they turn light golden.
Add the coarsely ground peanuts and rock salt, and mix well. Finally, add the soaked sabudana and mix everything together by stirring gently. Keep the flame on medium and cook the khichdi for 4–5 minutes.
Turn off the heat once the sago pearls start looking translucent. Cooking for too long can make the sago sticky. Finally, add lemon juice and fresh coriander, and mix well.
Serving Suggestion
Serve the piping hot sago khichdi with yogurt, peanut chutney (suitable for fasting), or fresh fruit. Squeezing a little lemon juice over the top further enhances the flavor.
