As the summer and monsoon seasons arrive, markets become flooded with mangoes. The mango is a fruit loved by almost everyone; people enjoy eating it fresh and also use it to create various delicious dishes. One such delicacy is *Aam Papad* (mango fruit leather), also known as mango candy or *Amavat*. It is a favorite among people of all ages—from children to the elderly—and has the added advantage of a long shelf life.

The tradition of making *Aam Papad* and mango candy runs deep in the Nimar region. Almost every household prepares and stores it during the summer so that the taste of mangoes can be enjoyed even during the monsoon and beyond. *Aam Papad* made from the 'Badami' mango variety is particularly popular here, prized for its flavor profile that balances mild sweetness with a hint of tanginess.
**Make Candy and *Papad* Using the Same Method**
Kush Patel, a maker of these treats, notes that a single recipe yields two distinct experiences. A unique feature of the Nimar region is that both *Aam Papad* and mango candy are prepared using the same recipe; children enjoy it as candy, while adults prefer it in the form of *Papad*. It is also consumed during fasting periods, which further adds to its versatility.
**Ingredients**
Ripe mango pulp: 500 grams
Sugar: 100 to 150 grams (to taste)
Cardamom powder: 1/3 teaspoon
**Easy Preparation Method**
First, peel the ripe mangoes, cut them into pieces, and blend them in a mixer to create a smooth, thin pulp. If the mangoes are slightly tart, add sugar to taste. You may also add cardamom powder to enhance the aroma and flavor.
Next, spread the prepared mixture in a thin, even layer onto a clean plate or a polythene sheet. Place it in strong sunlight to dry. This mango layer takes approximately 3 to 4 days to dry completely. Ensure it is placed in the sun daily to ensure thorough drying. Once completely dried, it can be cut into pieces and enjoyed as *Aam Papad* or mango candy.
Stays fresh for a long time
*Aam Papad* can be stored in an airtight container to keep it fresh for several days. It does not spoil easily and retains its flavor for a long period.

Get that market-style taste at home
With this simple method, you can prepare delicious, market-quality mango candy and *Aam Papad* right at home. It is not only tasty but also a healthy option for children. This traditional recipe from the Nimar region remains a favorite and is considered the easiest and most delicious way to preserve the sweetness of mangoes throughout the year.
