Recipe for Mixed Pakoras: When you suddenly crave something spicy or unexpected guests arrive, mixed pakoras become the easiest and most popular option. Mixed pakoras are made with various vegetables, making them delicious and nutritious. The best part is that they don't require much preparation and can be ready in just 15 minutes.

During the winter season, enjoying hot mixed pakoras with tea is a special treat. Made with gram flour and Indian spices, these pakoras are crispy on the outside and soft on the inside. This recipe, made with common vegetables found at home, is loved by people of all ages and can be easily prepared by anyone.
Ingredients for Mixed Pakoras (ready in 15 minutes):
Gram flour – 1 cup
Onion – 1 finely chopped
Potato – 1 small, thinly sliced
Cauliflower – half cup
Chili
Paneer
Green chili – 1 finely chopped
Ginger – 1 teaspoon grated
Turmeric – half teaspoon
Red chili powder – 1 teaspoon
Carom seeds (Ajwain) – half teaspoon
Salt – to taste
Water – as needed
Oil – for frying
Here's the simple method:
First, take a large, dry bowl. Add 1 cup of gram flour, and then add the chopped onions, potatoes, cauliflower, paneer, chilies, or other available chopped vegetables. Now add the green chilies, ginger, turmeric, red chili powder, carom seeds, and salt to taste. Mix all the ingredients well with dry hands or a spoon so that the spices are evenly distributed among the vegetables.
Now, add water little by little and mix the gram flour. Be careful not to add too much water at once; otherwise, the batter will become thin. The batter should be thick enough so that the vegetables are well-coated and don't drip. If desired, you can add a pinch of baking soda or rice flour to enhance the crispiness.
Now, heat enough oil in a pan over medium heat. To check if the oil is hot enough, drop a small amount of batter into it. If it rises to the surface immediately, the oil is ready. Now, take small portions of the batter with a spoon or your hand and drop them into the oil. Do not add too many fritters at once.

Fry the fritters over medium heat, turning them occasionally, until golden brown and crispy. Remove the cooked fritters onto a paper towel and serve hot with green chutney or sauce.
