People often think that making barfi requires buying mawa (reduced milk solids) from the market or that it's a very laborious process, but the good news is that today we will make barfi just like a professional confectioner, without using mawa. Its taste is so delicious, and the texture is so soft that it melts in your mouth.

How to make barfi without mawa?
To make barfi without mawa, we will use 'milk powder' or fresh 'cream' from home. This not only thickens the barfi but also adds a rich and creamy flavor. This easy-to-make sweet will surely impress your guests.

Ingredients for making Carrot Barfi
Carrots: 500 grams (try to use red and sweet carrots)
Milk: 1.5 cups (using full-cream milk will give a better taste)
Ghee: 3 to 4 tablespoons (for frying the carrots and for aroma)
Sugar: half a cup (or you can adjust the sweetness according to your taste)
Milk powder: 1 cup (this is the most important ingredient, as it will replace the mawa and help the barfi set)
Cardamom powder: half a teaspoon (for aroma)
Dry fruits: 2 tablespoons (cashews, almonds, and pistachios, finely chopped)

Method for making Carrot Barfi
First, grate the fresh red carrots. Now heat some ghee in a pan and fry the grated carrots. When the carrots start giving off a fragrant aroma, add the full-cream milk and cook until the carrots become soft. Once the milk has completely dried up, add the sugar. The sugar will release its water, so cook the mixture until it thickens.

Now comes the real magic. Add the milk powder. This will act as khoya (reduced milk solids) and give the barfi the right consistency to set. Finally, add the cardamom powder and your favorite dry fruits. When the mixture starts to leave the sides of the pan and comes together, turn off the heat.

Grease a plate with ghee, spread the mixture on it, and let it set. After 1-2 hours, cut it into square pieces. And there you have it, your delicious khoya-free Shahi Carrot Barfi is ready!
