The festival of Navratri begins on November 11th. During these nine days, different forms of Goddess Durga are worshipped. Devotees offer various types of *bhog* (ritual food offerings) to please the Goddess.

On the first day of Navratri, Goddess Shailputri is worshipped. It is believed that Goddess Shailputri is particularly fond of white sweets made from *ghee* (clarified butter). Therefore, on the first day of Navratri, you can offer *Khoya Barfi* (a white sweet made from solidified milk/khoa) to the Goddess. Let us look at the recipe.
**Khoya Barfi Recipe**

**Ingredients for Khoya Barfi:**
Khoya (Mawa): 500 grams
Sugar: 250 grams
Pure Desi Ghee: 2 tablespoons
Cardamom powder: 1 teaspoon
Chopped cashews and almonds: 2 tablespoons
Silver leaf (*Chandi ka Vark*)
**Method to make Khoya Barfi:**
First, take a heavy-bottomed pan (*kadhai*) and heat it over medium flame.
Add the fresh *khoya* to the pan and roast it for 5–7 minutes, stirring continuously.
Once the *khoya* releases an aroma and starts leaving the sides of the pan, reduce the heat to low.
Next, add the powdered sugar to the roasted *khoya* and keep stirring constantly. The mixture will become slightly runny after adding the sugar.
Now, add the pure *desi ghee* and mix well.

When the mixture is cooked thoroughly and begins to bind together like kneaded dough, add the cardamom powder and turn off the heat.
Transfer the mixture onto a plate or tray and garnish the top with chopped cashews, almonds, and silver leaf. Press down gently and leave it to cool for 1–2 hours. Once it cools down, cut it into barfi shapes. The barfi is ready.
