Ingredients for Amla Candy:
Amla (Indian gooseberry) – 500 grams
Sugar or Jaggery – To taste
Black salt – 1 teaspoon
Regular salt – 1 teaspoon
Red chili powder – 1 teaspoon
Roasted cumin powder – 1 teaspoon
Black pepper powder – 1/2 teaspoon
Chaat masala – 1/2 teaspoon
Dry ginger powder (Sonth) – 1 teaspoon

Method for Making Amla Candy:

First, wash the amlas thoroughly and boil them in a pressure cooker for 1-2 whistles until they soften.

Once cooled, separate the amla segments and remove the seeds.

Place the segments in a large bowl, add the sugar or jaggery, and mix well. Cover the bowl and let it sit for 1-2 days so the amlas release their juices and absorb the sweetness.

After this, remove the amla segments from the syrup, spread them out on a plate or tray, and let them dry in the sun for 2-3 days. Keep turning them occasionally so they dry evenly on all sides. Ensure the amla pieces do not become completely hard; they should remain slightly soft and sticky.

Now, transfer the dried amla pieces to a large bowl. Add black salt, regular salt, red chili powder, cumin powder, black pepper, chaat masala, and dry ginger powder, then mix everything well.

The tangy and spicy amla candy is ready.

Store the prepared candy in an airtight container and keep it in a cool, dry place. It can be stored for 2–3 weeks.
