You have likely eaten *paneer bhurji* many times, but have you ever tasted *bhurji* made from radishes and their leaves? This rustic *bhurji* is incredibly delicious. First, thoroughly wash the radishes and their leaves with clean water; since radish leaves often have soil on them, washing them well is essential. Next, chop the radishes and leaves into small pieces.

Now, place the chopped radishes and leaves in a pressure cooker, add the required amount of water, and set it on the stove. Let the cooker whistle about four times; once the radishes and leaves have softened completely, turn off the heat. After the pressure releases, remove the radishes and leaves from the cooker and squeeze out the excess water thoroughly.
