Tips for Making Badam Barfi (Almond Fudge): Whether it’s a festival or guests arriving at home, the taste of sweets makes every occasion special. Badam Barfi, commonly found in markets, is a favorite among many. You can now easily prepare this sweet at home—it requires neither expensive ingredients nor the specialized machinery used by professional confectioners. All you need to know is how to prepare the almonds, make the sugar syrup, and cook the mixture correctly. Kaushal Kishore Sah, who shared that by following a few simple tricks and tips, one can make delicious, shop-quality Badam Barfi at home.

Soak almonds for 3–4 hours; removing the skins enhances the flavor.
According to Kaushal Kishore Sah, the process begins with preparing the almonds. Start by taking the required quantity of almonds and soaking them in water for at least three to four hours. Afterward, rinse them in clean water and boil them thoroughly. Once the almonds soften, remove them from the hot water and place them into cold water; this makes it easy to peel off the skins. Removing the skins is essential, as it improves both the color and the texture of the Barfi. Next, place the peeled almonds in a grinder and blend them well. Ensure the almond paste is smooth, with no remaining lumps or coarse bits.
Use 800 grams of sugar for every kilogram of almonds; the consistency of the sugar syrup is crucial.
The quantity of sugar and the consistency of the sugar syrup are the most critical factors in making Badam Barfi. According to the expert, you need approximately 800 grams of sugar for every kilogram of almonds. Begin by heating the sugar with water in a pan to prepare the sugar syrup. Ensure that the sugar syrup is not too thin; it should have a slightly thick consistency. Next, add the prepared almond paste to the sugar syrup and cook it over a low flame, stirring continuously. This prevents the mixture from sticking to the bottom of the pan and ensures it cooks evenly. You can also add a little cardamom powder to enhance the flavor. Notably, there is no need for all-purpose flour (maida) to make almond barfi.

Roll out the mixture and cut it into pieces—your almond barfi is ready!
Once the mixture of almonds and sugar syrup has cooked thoroughly and thickened, remove it from the pan and place it on a clean surface or a tray. After it has cooled slightly, roll out the mixture into a thin layer. Then, use a knife to cut it into your desired shapes. Allow it to set for a while, and your delicious almond barfi will be ready. According to artisan Kaushal Kishore Sah, the secret to the success of this sweet lies in preparing the almonds correctly, achieving the right consistency for the sugar syrup, and cooking the mixture thoroughly. By following these simple tips, you can recreate the authentic taste of a professional confectioner’s (halwai’s) sweets right at home.
