Rajasthani Dahi Mirchi Recipe: If you are bored of eating the same vegetables every day, it is time to add a Rajasthani touch to your meal. Rajasthani Dahi-Mirchi (Curd-Chili) is a traditional dish that can be easily prepared with just a few ingredients. The tanginess of the curd, the aroma of spices, and the spicy kick of the chilies make it a perfect accompaniment to roti, paratha, or dal-chawal. Ingredients for Dahi-Mirchi
10-12 green chilies, 1 cup fresh curd (yogurt), 1-2 teaspoons gram flour (besan), 1 teaspoon cumin seeds, half a teaspoon turmeric powder, half a teaspoon coriander powder, a little red chili powder, salt, and 1-2 tablespoons oil. You can also use asafoetida (hing) and a little mustard seeds (rai).
Step 1: First, wash the green chilies thoroughly and pat them dry. Now, slit them lengthwise to cut them into two halves. If you do not want it too spicy, you can remove some of the chili seeds. Heat a little oil in a pan and lightly sauté the chilies. Roast them until their color begins to change and they release a mild aroma. Then, transfer the chilies to a plate.
Step 2: Whisk the curd thoroughly in a bowl. Mix in the gram flour, turmeric powder, coriander powder, red chili powder, and a little salt. Now, add some water to prepare a thin, smooth mixture. Adding gram flour helps thicken the curd gravy nicely.
Step 3: Now, add a little oil to the same pan as needed. Add cumin seeds and asafoetida. When the cumin seeds begin to crackle, lower the heat and pour in the curd mixture while stirring continuously. Do not mix on high heat after adding the curd, or it might curdle. Keep stirring continuously on low to medium heat for a few minutes.
Step 4: When the gravy starts to thicken slightly, add the roasted green chilies. Mix everything well and cook over a low flame for 3–4 minutes. Add salt to taste. You can also garnish it with some coriander leaves.
How to Serve
Serve the Rajasthani Dahi-Mirchi piping hot with roti, bajra roti, paratha, or dal-chawal. The mild tanginess of the yogurt and the spicy kick of the chilies can elevate even a simple meal into something special.
