Tips and Tricks: While the rainy season brings welcome relief from the heat, it also creates problems for food items stored in the kitchen. Increased humidity in the air during the rains causes lentils, spices, and grains to spoil quickly. If lentils are not stored correctly, they can develop mold or become infested with insects. Consuming such lentils can be harmful to your health. However, by following a few simple measures, you can keep your lentils safe for a long time...

Store in airtight containers
Always store lentils in high-quality airtight containers during the rainy season. This prevents moisture from entering and keeps the lentils fresh for longer. Glass or steel containers are considered better than plastic ones.
Don't forget to sun-dry
Whenever the sun comes out during the monsoon, spread the lentils out in mild sunlight for 2–3 hours. This removes excess moisture and reduces the risk of mold or insect infestation.
Add bay leaves or neem leaves.
Adding 2–3 dried bay leaves or dried neem leaves to the lentil container during the rainy season can reduce the likelihood of insect infestation. This is a traditional and simple home remedy practiced in many households.
Do not touch with wet hands.
Always use a dry spoon or dry hands when taking out lentils during the rainy season. Even a small amount of moisture entering the container can lead to mold growth.
Buy only what you need.
Avoid buying and storing large quantities of lentils for long periods during the monsoon. Buy in smaller amounts and replenish your stock periodically. This minimizes the risk of spoilage and ensures you always have fresh lentils.

What to do with moldy lentils?
If you notice mold, a foul odor, or an unusual color in the lentils, do not attempt to eat them. Consuming such lentils can lead to stomach problems and food poisoning. From a safety perspective, it is best to throw it away.
